Hailing from the vibrant city of Dehradun, Uttarakhand, Chef Alam brings with him a wealth of experience and expertise in Indian and Thai cuisine, with a culinary journey spanning over 22 years. His previous roles include stints at esteemed establishments such as Bangkok Marriott Marquis Queen's Park, Bangkok Marriott Hotel Sukhumvit, and JW Marriott Phuket Resort & Spa.

As the Executive Sous Chef, Chef Alam's main responsibility is to oversee the development of restaurant menus and management, as well as the banquet kitchen. Not only that, Chef Alam also approaches his craft like an artist, infusing his creations with a touch of creativity and finesse. He is passionate about creating dishes that are not only healthy but also tantalize the taste buds of diners.

Since young, Chef Loc's early interest for cooking, together with the innate curiosity about the spices in his mom's kitchen, had laid the foundation for his inspiring career.

Now, with 16 years of experience in both local and international companies, Chef Loc always impresses guests with extraordinary fusion twists on traditional Vietnamese dishes. His dedication to exploring new techniques and ingredients, especially through visits to local markets and conversations with vendors, showcases his genuine love for the craft.

Chef Loc's dream is to elevate Vietnamese cuisine to other levels, where global diners adore and recognise Vietnamese cuisine.
